What's a Lime Rickey? A Lime Rickey is a blend of a freshly Squeezed Lime, Sparkling Seltzer, and a made to perfection sweetener. You can usually choose from other flavors like Strawberry, Cherry, Watermelon and Grape, but that would make them a Cherry Rickey, Watermelon Rickey or Grape Rickey, I prefer the original Lime Rickey! Of course the summer soft drink has nothing to do with invitations and greeting cards but I really like the drink and the name!
Totally awesome recipe for Lime Rickey's
Looking for the perfect drink for your next barbecue or garden party? Look no further than the lime rickey – a refreshingly tart combination of fresh lime juice, simple syrup and seltzer. It's easy to make and is a great "virgin" drink for teetotalers. Five citrus juicer options.
Prep Time: 10 minutes
Total Time: 10 minutes
* 8 ounces fresh lime juice (from about 6 to 7 limes)
* 4 ounces simple syrup (see simple syrup recipe below the photo)
* 12 ounces seltzer water
* Lime wedges, for garnish
In a pitcher or a measuring cup with a spout, combine the lime juice and simple syrup. 2. Fill four glasses with ice. Divide the lime juice-simple syrup mixture between the glasses (about 3 ounces each), and fill the rest of the glass with seltzer (about 3 ounces). Stir with a swizzle stick or a long spoon and garnish with a lime wedge, if desired. This recipe for Lime Rickeys makes 4 servings, about 6 ounces each.
The much needed recipe for Simple Syrup required to make the Lime Rickey (can't make a Rickey without the syrup!)
Simple Syrup requires only water and granulated sugar, and can easily be made in only a few minutes. It's a building block for cocktails or for nonalcoholic drinks, and can also be used to sweeten iced tea or coffee, or even to brush over cakes before frosting to keep them moist. You can even flavor simple syrup by steeping ingredients like vanilla beans, herbs or citrus peel in it. Simple syrup will keep in the refrigerator for up to 1 month.

Total Time: 5 minutes Ingredients:
* 1 cup granulated sugar
* 1 cup water
1. In a small saucepan combine sugar and water. Heat over medium-low heat, stirring occasionally, until the mixture comes to a simmer and the sugar dissolves until the liquid is no longer cloudy and is perfectly clear, about 3 to 5 minutes. Remove from heat, cool simple syrup completely before storing in the refrigerator. This recipe for Simple Syrup makes about 1 1/2 cups.
